Wern Watkin Welsh Teacakes Recipes

Ingredients
For the recipe:
- 255g organic plain flour
- 1tsp Steenbergs baking powder
- 1tsp Steenbergs organic allspice powder
- 1tsp Steenbergs organic nutmeg powder
- ¼ tsp Steenbergs fleur de sel (or sea salt) - crushed fine
- 100g Steenbergs organic caster sugar
- 115g organic unsalted butter (or vegan block))
- 1 free range organic egg (lightly beaten)
- 60ml organic milk
- 35g organic currants

Method

Oil a heavy pan or old fashioned griddle.

In a bowl, sieve together the organic flour, Steenbergs baking powder, Steenbergs organic allspice, Steenbergs organic Fairtrade nutmeg powder, fleur de sel and organic Fairtrade caster sugar.

Using a mixer or blender, cut the organic butter in with flour mixture. Add the beaten egg into the mixture. Fold in the organic currants.

Gather into a ball and roll out on a floured board until it is a bout ½cm thick and cut out into 10cm rounds with a cutter or glass.

Heat the pan or griddle until it is very hot. Cook the teacakes on 1 side until they are brown. Turn and cook on the other side until brown. Serve warm with clotted cream or butter and jam.
