Ingredients

Gluten free mini cakes
  • 150g gluten free self raising flour
  • 100g caster sugar
  • 100g 100g unsalted butter, softened
  • 2 large eggs
  • 2tsp Steenbergs organic Fairtrade vanilla extract
  • 3 tbsp white chocolate spread
  • 2 tbsp milk
  • 1/2 tsp baking powder
  • pinch salt
For the vanilla piped icing
  • 100g unsalted butter softened
  • 180g icing sugar sifted
  • 2 tbsp white chocolate spread
  • 1tsp Steenbergs organic Faitrade vanilla extract
  • 1-2 tbsp milk , as needed
To finish
  • sprinkling dried edible flowers

Method

Preheat the oven to 170°C fan. Line a mini muffin tin or mini cake tin with baking cases.

Beat the butter and caster sugar until light and fluffy. Add the eggs one at a time, beating well between each addition.

Mix in the Steenbergs organic Fairtrade vanilla extract and white chocolate spread.

Fold through the gluten-free flour, baking powder and salt, then add the milk and gently mix until you have a smooth, creamy batter.

Divide between the cases, filling each about ⅔ full. Bake for 12–15 minutes, or until lightly golden and a skewer comes out clean. Cool completely.

Make the frosting

Beat the butter until pale and fluffy.

Gradually add the icing sugar, then beat in the white chocolate spread and Steenbergs vanilla extract. Add a splash of milk until smooth, light and pipeable.

Pipe little swirls/ribbons of the vanilla frosting generously onto each cooled mini cake. Finish off with dried edible flowers for a beautiful bakery-style finish. 🌸🤍
