Seggiano Italian organic spelt spaghetti is made by Monograno Felicetti.

There are four things that define and shape pasta from Monograno Felicetti:

1) Mountain air of the Dolomites (where they are based)

2) fresh spring water

3) pure cereal semolina

4) been making pasta since 1908

This organic spelt spaghetti is popular as not only is it delicious and traditionally made, it is rich in protein and easily digested.

Facts about spelt (Triticum dicoccum): spelt is an ancient cereal packed with nutrients like vitamin A, B, C, E minerals,  salt and insoluble fibre. It (also known as emmer) has been in use since ancient days of Celts, Egyptians and Etruscans. Spelt has special amino acids and proteins that make it unique among cereals. This organic spelt pasta is the culmination of a long effort to create the perfect combination of very different factors. Production is limited.

During cooking delicate scents of machis, fresh nut and cooked aubergine are released. Texture is firm and slightly crunchy, like bread crust, with a flavour that combines hints of peanut butter and red date.

Cooking tips: Stir the spaghetti when you add the water, away to keep the strands from sticking together. It’s generally recommended to stir with a fork during cooking to help separate the spaghetti.
