Product Description

Steenbergs Urfa Chilli Flakes are a gourmet Turkish dried chilli. They come from the Urfa region in southeast Turkey. Alternative names are Urfa Biber and Urfa Isot Biber.

Urfa chilli flakes are a dark red that verges on a black treacle colour. Urfa Biber Chilli has a sweet, dried fruity flavour, some smokiness and a mild heat (Scoville units of 7,500). Similar to Aleppo Chilli Flakes.

The flavours and colour result from the way the chillis are dried. The chillis are picked and then put out in the sun to dry for about a week. After then, they are put into bags to sweat in the sun. At night, the bags are covered in cloths to keep them warm. At the end of another week, they’ve turned a deep maroon and developed complex flavours. They are removed from the bags and dried again.

Axel’s Tasting Notes: Hot: medium heat, a deep, rounded, mild smokey flavour, with a nice little chilli kick and a hint of sumac-like fruity sharpness.

Food Pairing: Great with lamb, especially kofte, tomatoes, aubergines.
