The mint family covers a wide array of varieties with spearmint being the most used species for culinary purposes. Spearmint, Mentha spicata, is hardy perennial that has mid to light green colour and fairly low growing (45-60cm or 18-24 inches). Spearmint leaves are green pointed and serrated - like a spear hence the name - and it has purple flowers in the summer and which are borne in clusters on cylindrical spires. Spearmint has a distinctive sweet minty aroma and a pleasing light minty taste, which is not too pungent. Spearmint leaves are generally harvested just before flowering when most of the photosynthetic energy has been used to create the leaves and wonderful flavours of the minty volatile oils, predominantly menthol.
