1 kg | potatoes, peeled, quartered and par boiled. |
A small handful | of black/green/mixed olives |
1 tablespoon | fresh parsley, chopped, plus extra for garnishing |
1 tsp | ground turmeric |
4-6 strands | saffron |
1 tsp | sea salt |
100ml | olive oil |
100ml | water |
1 tbsp | mustard |
1 tsp | dried spearmint |

1. Preheat your oven to 180 degrees/gas mark 4 and line a baking tray with greaseproof paper, set aside.
2. Add your potatoes to your baking tray and add in all the ingredients apart from olives. Cover your potatoes in your seasoning and sauces. Bake for 25-30 minutes, tossing every now and again. Garnish with your chopped parsley and olives and eat right away.
