Spicy Spinach Egg Nests Recipe
This is one of Sophie's favourite suppers, comfort food.
Ingredients
| 2 tbsp | olive oil |
| 1 | onion finely chopped |
| 2 cloves | garlic |
| 2 tsp | Steenbergs organic garam masala |
| 2 tsp | organic ground turmeric |
| 3 | tomatoes roughly chopped (chopped tinned tomatoes are fine) |
| 250g | fresh spinach |
| 100g | feta cheese |
| 2 | eggs |
| pinch | Steenbergs organic perfect salt |
Method
- Heat the oil, cook the onions and garlic until soft.
- Stir in the garam masala and turmeric for one minute.
- Add the tomatoes - season well and cook for a further two minutes.
- Pile the spinach on top, mix well with tomatoes and simmer for five minutes. Scatter the cheese over the mixture.
- Crack the eggs on top and cook until the eggs are cooked.
