Ingredients

red onion, sliced thinly into rings

red pepper - I used a long red pepper

yellow pepper

juice of 1 lime

1/2 tbsn

Steenbergs organic fajita seasoning, add to taste (I used 1 tbsn)

Handful

fine green beans, topped and tailed

Handful

cherry tomatoes

Handful

each of watercress, spinach and rocket

tortilla (1 each)

organic perfect Salt to taste

Guacamole, salsa and soured cream (dairy free alternative if required) to serve

A delicious mixture of vegetables brought alive by fajita seasoning. What a wonderful way to ensure your children go somewhere towards having their 5-a-day without realising it, fantastic flavours without being too spicy, unless you want to hot them up!

This recipe serves 4.

Method

Heat oil in a large skillet, or very heavy bottomed pan
Turn down the heat slightly and add the onion slices. Cook until starting to colour
Add the green beans and cook for 2 minutes
Add the peppers and cook for 2 minutes
Add the fajita seasoning, lime juice and a little water (to assist cooking). Stir and cook for 5 minutes
Add cherry tomatoes to warm through and soften
Heat the tortillas according to instructions and prepare guacamole, salsa and soured cream (or put into dishes!)
Add the spinach, watercress and rocket to the pan. Stir the ingredients and remove from the heat immediately
Pile the ingredients onto the tortillas, roll them into a parcel and serve with the salsa, guacamole and soured cream - add to taste and preference. Enjoy!
