5 Favourite Salads from the Summer
Salads aren't simply for summer. Enjoy delicious fresh flavour combinations all year round.
Earlier on this summer we were blessed with wonderful weather and fabulous opportunities for eating outside. The weather may have turned autumnal now but there is still a plethora of delicious British veg out there, and plenty of tasty recipes to help you make the most of them. Here are a few of our favourite salads from the summer.
1. Potato Salad with Broad Beans and Pistachios
A delicious potato salad recipe from Great British Grub, without the mayonnaise but instead with a tasty topping of broad beans, pistachios and Parmesan.
2. Beetroot & Hazelnut Salad with Hazelnut Kefir Dressing

3. Herby Lentil Salad

4. Cumin Roasted Aubergine Wedges
A really tasty salad of cumin roasted aubergines from Sabrina Ghayour, drizzled with yoghurt, pomegranate and toasted seeds. Delicious on its own but it would also work fabulously as part of a Middle Eastern feast.
