Savory tastes somewhere between thyme and mint with a dash of pepper. Particularly good in bean soup, Steenbergs organic savory works well in herb mixes particularly when combined with thyme, rosemary and sage.
Savory comes in two major varieties - summer and winter savory. Steenbergs savory is summer savory, Satureja hortensis. Summer savory is an annual herb that is small and slender, whch grows to 45cm high (18 inches). Savory has hairy branching stems with leaves that are 5-12mm long (0.25-0.5 inches). Savory leaves are bronzey green in colour and are similar in shape to tarragon leaves, but smaller. Summer savory has delightful small pink or white flowers that blossom in late summer. The aroma of summer savory leaves is fragrant, with aromas of thyme and hints of marjoram, while its taste is similarly herby but with an appetizing peppery bit to them. Savory is one of those herbs whose flavour intensifies on drying so is preferred dry to fresh like bay (at least by me).
