Easy Apple Crumble Cake recipe
A delicious apple cake packed with fruit and spices. Perfect for autumn! Many thanks to Nikibakes for the tasty recipe.
Ingredients
| 125g | olive oil |
| 125g | coconut sugar or light brown sugar |
| 3 | medium eggs |
| 200g | plain flour or GF flour |
| 1 tsp | ground cinnamon |
| 1 tsp | Steenbergs apple pie spice mix |
| 2 tsp | baking powder |
| 4 | apples, 1 grated plus 3 halved, cored and finely sliced |
| 2 tbsp | demerara sugar |
| to serve | ice cream or custard |
Method
- Preheat the oven to 180C and grease a cake tin and line with greaseproof paper, set aside.
- Mix the olive oil and sugar in a bowl and then add the eggs, one at a time.
- Stir in the flour and apple pie spice mix, cinnamon powder along with the baking powder. Mix until just combined.
- Add in your grated apple and scrape the batter into the prepared tin and smooth the top using a spatula to create an even layer. Nestle the cored and sliced apple halves into the batter, press them in so they are half submerged.
- Sprinkle the cake with demerara sugar, bake in the oven for 50-55 minutes or until golden brown. Allow to cool completely in the tin, then slice up and serve with ice cream or custard. Enjoy!
