280g | mixed dried fruit soaked overnight in the juice of half an orange (and a little sloe gin!) - we used dates, raisins, sultanas & cranberries |
250g | toasted nuts, whizzed in a processor until ground (or leave a little texture if you like) - we used mainly almonds & pecans |
1 | orange (zested & juiced) - zest first then use half the juice to soak the dried fruit and the other half to make the icing |
1 | lemon (just zest) |
1/2 tsp | ground cinnamon |
a good grating | nutmeg |
150g | icing sugar, sifted |
a good squeeze | orange juice |
