Trying to buy a tasty, sweet snack, that does not lead to a sugar surge, has led me to make my own protein-rich snack bites that provide a 'healthy' energy boost. I have used only one flavour of nut before, which gives a very distinct flavour, but I prefer the 'mixed nut' flavour. Any nut mixture can be used with any nut butter or indeed dried fruit - so it is a question of seeing what is in the cupboard!
Raw Energy Bites Recipe
Recipe for protein rich bites without sugar and flavoured with Steenbergs organic orange extract.
Ingredients
| 100g | organic cashew nuts |
| 50g | organic ground almonds |
| 100g | organic dried unsulphured apricots |
| 1tbsp | organic almond butter |
| 1tsp | Steenbergs organic orange extract |
| 1/2tsp | Steenbergs fairtrade organic mixed spice |
| 2tbsp | organic desiccated coconut |
Method
- Blend the cashews, almonds, apricots, mixed spice and almond butter in a liquidizer until they resemble large breadcrumbs
- Add the orange extract and a teaspoon of water. Combine and add a little more water until you are able to roll the mixture into mouth-sized balls
- Roll in desiccated coconut, or sesame seeds, and store in the fridge - but do not forget to pop one in your bag or in the car for that moment when an energy boost is required!
