Ingredients
| 220g | butter |
| 450g | Fairtrade caster sugar |
| 90g | Fairtrade organic cocoa |
| 270g | organic self-raising flour |
| 4 | free-range eggs |
| 4tbsps | milk |
Method
- Grease a metal baking tray with a pastry (or paint) brush; turn the baking tray upside down after greasing to allow any excess oil to drain away. Heat oven to 180°C.
- Sift the organic self-raising flour and organic cocoa into a large mixing bowl. Add the sugar, butter and eggs. Beat all the ingredients together with a blender/mixer. Don't overmix and don't worry about the appalling look of the sloppy mixture - this quite normal!
- Pour the mixture into the prepared pan and smooth to an even layer. Bake for 20 - 25 minutes, or until just set in the middle - a wooden skewer inserted into the centre should come out with just a few moist crumbs on it. Don't overbake. Leave to cool completely in the pan before cutting into squares and serving.
