For the cupcakes

GF self-raising flour

caster sugar

golden syrup

vanilla extract

ready made meringue nests

fresh whipping cream with 1/4 tsp blue food colouring

fresh strawberries, sliced

edible blue cornflowers

strawberry sauce for decoration, optional

Method

Preheat the oven to 180ºC and line the cupcake tin with the cases, set aside.
Put all the ingredients except for the milk in a bowl and cream the butter and sugar with a silicone spatula, beat in the eggs one at a time with a little of the flour.
Then, add the vanilla extract and fold in the rest of the flour, adding the milk to get a dropping consistency.
Spoon and scrape the cupcake batter in, trying to fill each case equally.
Put in the oven and bake for 15-20 minutes or until the cupcakes are cooked and golden on top. Take the cupcakes in their cases out of the tin and let them cool, on a wire rack.
Once they're cool, assemble each cupcake with a meringue nest, freshly whipped cream, strawberries, edible cornflowers and any other decorations you fancy, it's up to you. Enjoy!
