Ingredients
| 1 Pack | Giant couscous |
| 1 tin (400g) | Cooked Chickpeas |
| A handful | of mixed olives - stones removed |
| 1 pack | washed Rocket leaves |
| 1 Pack | Baby spinach leaves |
| 1 pack | Cherry tomatoes on the vine |
| 2 | Lemons cut into 6 wedges each |
| 3 tablespoons | organic cold pressed olive oil |
| 3 tablespoons | Lemon Juice |
| Organic 4 colour ground peppercorns to taste | |
| Organic traditional sea salt to taste |
Method
- Cook the giant couscous according to the packet instructions
- Drain under cold running water, put into a large bowl
- Chop tomatoes into quarters add to bowl
- Slice the lemons into wedges add to the bowl
- Add the Rocket and spinach to the bowl
- Peel and slice the red onions thinly and add to bowl
- Add the Olives to the bowl
- Whisk the Olive oil and Lemon juice together and season with salt and pepper to your taste
- pour the dressing over the salad bown and mix well
- Serve in bowls, squeezing the lemon wedges over the salad as you eat
