There's something very satisfying about pickling and this is a great recipe to start you on your way..
| 250ml | white wine vinegar |
| 125ml | apple cider vinegar |
| 125ml | water |
| 2 tbsp | granulated sugar |
| 1.5-2 tsp | salt |
| 1 | clove of garlic, sliced |
| 1 | small onion, peeled & sliced |
| 1 tsp per jar | Steenbergs organic pickling spice |
| Carrot batons with lovage leaves | |
| Cucumber slices with pink peppercorns | |
| Cauliflower florets with hot Tasmanian Mountain Peppercorns |
A great way to preserve some of the sunshine for later in the year. Experiment with different combinations of vegetables and spices depending on what you have to hand.
This makes quite a strong pickling liquor so do substitute some of the vinegar for water if you prefer it weaker.
