Recipe for4 Celery still seems a slightly under sung vegetable but its delicious cooked.
Ingredients
| 1 | head celery |
| 5 | shallots, peeled |
| 1 sprig or pinch | of organic thyme |
| 1 sprig or pinch | of organic rosemary |
| 4 | organic sage leaves |
| 3 | slices streaky bacon, cut into small pieces (optional) |
| 3tbsp | olive oil |
| 1 dessertspoon | organic white wine vinegar |
| Steenbergs Organic natural sea salt |
Freshly milled organic black pepper, alternatively substitute organic perfect salt for the salt and pepper
Method
- Heat the oven to 200°C. Prepare the celery, removing the tough outer layers and cut into 9 cm pieces. Add 1 tablespoon oil to a casserole and put in the shallots (or 2 onions quartered if you do not have shallots!) and cubed bacon and fry for 2 - 3 minutes. Add the celery and fry for a further 2 minutes. Now combine all the remaining ingredients and put the top on the casserole dish and cook for 20 - 25 minutes in preheated oven.
* The salt and pepper can be substituted for a pinch of Steenbergs OrganicPerfect Salt blend.
