Herby Greek potatoes baked in tomato sauce
Ingredients
| 800g | potatoes |
| 1 | white onion |
| 2 cloves | garlic |
| A pinch | lemon pepper |
| A pinch | Mediterranean salt |
| A pinch | ground black pepper |
| A tin | chopped tomatoes |
| 200ml | water |
| 1 | lemon, cut into wedges |
Method
- Place your pan on the heat and peel and slice your potatoes into 1cm rounds
- Next, chop your onions into large pieces and the garlic into thin slices. Add the olive oil, onions, and garlic into the pot, and sauté for about 5 minutes
- Add all your spices and potatoes and cook for a further 5 minutes over a medium heat
- Add the tomatoes and water and mix well. Cover with the pot’s lid, lower the heat to medium, and boil for 40-45 minutes
- Serve your potatoes yiahni warm, with Greek yoghurt and wedges of fresh lemon...enjoy enjoy!
