Ingredients
For the Za'atar Lemon Vinaigarette
| 1 cup | good quality olive oil |
| Juice of 1 large | lemon |
| 1 tbsp | Steenbergs Za'atar |
For Salad
| 1/2 | cucumber, finely chopped |
| 2 | tomatoes, cubed |
| a small handful | walnuts |
| 1 | carrot, cubed |
| a sprinkling of | pomegranate seeds and sweetcorn |
| 2-3 | sweet bite peppers or 1 bell pepper, chopped up |
| a couple | lime wedges |
Method
- Simply assemble your salad and whisk up the ingredients for the Za’atar Lemon-Vinaigrette and pour it over your veggies…a perfect salad!
