Old Hamlet's elderflower wine ingredients will make about 4.5 litres of refreshing non-alcoholic drink in 10 days.
Ingredients: Elderflower, Lemon Peel, Yeast.
Directions for Elderflower Wine: Dissolve 750 g of sugar into 500 ml of warm water. Put this mixture into a large bowl and add 4 litres of cold water, the elder-flower heads and juice of one lemon. Stir well, sprinkle on the yeast, cover and leave to steep for 4 days in a warm room. After these 4 days, strain thoroughly and pour into three 1.5 litre plastic screw top bottles, leaving a little room for expansion. Wait for another 6 days before staring to drink the elderflower wine.
Enough for 2 batches of 2 litres, or 4 litres of delicious homemade ginger beer.
Ingredients: Sugar, Ginger, Cream of Tartar, Lemon Peel, Yeast.
Directions for Ginger Beer: Pour one sachet of the ginger mixture and 225 g of sugar into a mixing bowl; add 2 litres of boiling water and stir gently to dissolve the sugar. Stir in the grated rind and juice of one lemon and allow to cool. When the ginger mixture is body temperature to touch, sprinkle one sachet of dried yeast on top and cover with cling film. Keep in a warm place for 3 days, then siphon off the ginger beer mixture into 3 plastic bottles. The ginger beer should be ready to drink after a further 4 days.
Lemon Barley Drink:
Each calico bag has enough for 3 batches of about 3 litres of refreshing lemon barley squash.
Ingredients: Pearl Barley, Sugar, Lemon Peel. Allergens: Ingredients in Bold.
Directions: Take 2 lemons and grate the peel thinly. Add the grated lemon peel into a pan, and 1 Old Hamlet lemon barley sachet and 1 litre of water. Bring the lemon barley mixture to the boil, cover the pan and gently simmer for 1.5 hours, then remove from the heat. In another pan, add 4 tablespoons of sugar and the juice of the two lemons; gently heat until the sugar is dissolved. Strain the original mixture into the pan and allow to cool.
