Ingredients
| 2 | large eggs |
| 1/2 tsp | Steenbergs traditional sea salt |
| 1 tsp | Steenbergs organic Fairtrade vanilla extract |
| 400ml/ 14 fl oz | milk |
| 8 large tablespoons | fine Matzo meal |
| 2-3 tbsp | of organic golden caster sugar |
Method
- Put all the ingredients into a bowl, whisk together then leave for 10 minutes for the Matzo meal to swell up. It should now be at a dropping consistency.
- Pour about ¼ - ½ inch / ½ - 1 cm of sunflower oil into a large heavy bottomed frying pan, ideally using one without a strong flavour of its own.
- When hot, drop in a dessertspoonful of the bubalasbatter into the oil, waituntil bubbles form and the edges start to crisp. Flip over and fry until golden brown.
- Put the caster sugar into a large plate or tray. When the individual bubalas have been cooked, put them into the tray and sprinkle caster sugar over them.
- Eat right away.
