1. Heat up your coconut milk and honey in a deep pan.
2. Turn up the heat until the mixture starts to heat up. Boil vigorously for about 10 minutes, it will start to change colour and reduce down considerably, stir occasionally.
3. Once you see the colour changing to light amber, use a spatula to scrape the sides and turn the heat down slightly. Add your salt (if using) at this stage.
4. Once it’s reduced down by 70% and has thickened into a sauce, take off the heat and allow to cool completely before pouring into a glass jar and store in the fridge.
