White Chocolate and Summer Berry Blondies Recipe

Ingredients
| 150g | unsalted butter/dairy free butter, melted |
| 180g | coconut sugar |
| 1 teaspoon | Steenbergs organic Fairtrade vanilla extract |
| 1 | large egg, beaten |
| 180g | gluten free/regular plain flour |
| 150g | white chocolate buttons/chips (dairy free if required) |
| 80g | fresh or frozen berries |
Method
- Preheat your oven to 180C and grease and line an 8-inch square baking tin with greaseproof paper, set aside.
- In a large mixing bowl, add the melted butter and coconut sugar and gently whisk together. Add the vanilla extract and stir.
- Next, add the egg and mix until combined. Now switch to a silicone spatula and fold in the flour and white chocolate. Lastly add in the fresh/frozen raspberries and pour the batter in the prepared tin, smooth the top and place in the oven.
- Bake your blondies for approximately 30 minutes or until golden on the edges. Allow to cool before slicing up!
