Delicious white chocolate and lemon blondies in Coronation colours! Many thanks to Nikibakes for the recipe.
Ingredients
For the blondies
| 175g | unsalted butter |
| 175g | white chocolate |
| 150g | light brown sugar |
| 3 | medium eggs |
| 1 tsp | lemon extract |
| juice of half a lemon | |
| 175g | plain flour (can be gluten free) |
| 250g | white chocolate chips |
For the topping
| 180g | white chocolate |
| 90ml | double cream |
| for decoration | sprinkles |
| for decoration | edible flowers |
Method
- Preheat the oven to 180ºc and line a square tin with greaseproof paper, set aside.
- Add the unsalted butter and white chocolate to the pan and melt on low heat. Once melted, stir in the light brown soft sugar. Add in the eggs, lemon extract, and juice, and stir again.
- Mix through the gluten free plain flour and pour the mixture into the lined tin and bake for 22-27 minutes until there is an ever-so-slight wobble in the mixture.
- Let the blondies cool in the tin fully, before heating up the cream and the white chocolate, pouring it on top of the blondies, and then setting it in the fridge overnight for best results. Decorate as you wish and enjoy!
