Ingredients
| 6 | organic eggs |
| 1 tbsp | cubeb pepper |
| 50g | panko breadcrumbs |
| 2 tbsp | plain flour |
| 1 tsp | himalayan sea salt |
| Oil | For Deep Frying |
Method
- Boil 4 of the eggs in ready boiling water for 4 minutes 30 seconds.
- Drain and run under cold water to stop cooking.
- Place the panko breadcrumbs in a food processor and pulse to break down into a finer crumb
- Whisk 2 eggs in a dish.
- Grind the cubeb pepper and salt in a pestle and mortar and add to the breadcrumbs in another dish, mix well.
- Pour the flour into a third dish and peel the eggs.
- Dip the eggs into the flour, then egg, then breadcrumbs.
- Dip each egg back in the egg and then the breadcrumbs for a second coat.
- Refrigerate until ready to cook.
- Heat the oil in a pan (no more than 2/3 full). Fry the eggs for 1 minute or so until crisp and heated through
- Drain on a rack, sprinkle with salt and serve immediately.
