Mexican Mangos Con Crema Recipe (spiced mangoes in syrup)
A traditional Mexican dessert of mangoes in a a spiced syrup.
Ingredients
| 3 | mangoes, thickly sliced lengthwise |
| 100g | cane sugar |
| 250ml | water |
| 1 small | organic cinnamon stick |
| ½ | organic vanilla pod, split lengthwise |
| 150ml | Double Cream or Coconut Whipping Cream |
| 4tbsp | rum |
Method
- Combine water, half the sugar and the cinnamon and vanilla in a heavy saucepan. Bring to the boil and simmer for 20 minutes until the syrup thickens, stirring occasionally. Add the mango slices to the syrup and simmer for 7 minutes until tender. Discard the cinnamon stick and vanilla pod. Allow to cool for 1 hour.
- Just before serving, whip the cream with the remaining sugar and fold in the rum.
