Ingredients
| 1 | small red onion, chopped into bite sized pieces |
| 1 | juice of large lemon |
| 2 tsp | sumac |
| 1/4 tsp | ground cumin |
| 1 tsp | Niki's Turkish Blend |
| 1/4 tsp | smoked paprika |
| 100g | Turkish marinated olives, plus extra for garnish |
| 100ml | extra virgin olive oil |
| 1 can | cannellini beans/butter beans, drained and rinsed |
| 2-3 | medium tomatoes, sliced up |
| a handful | freshly chopped dill |
| to season | sea salt & black pepper |
Method
- In a large bowl, add your dressing ingredients and mix thoroughly with a whisk. Add your all your vegetables and Turkish marinated olives and toss well.
- Taste and adjust seasoning (I often add a bit more salt and sumac) and garnish with freshly chopped dill and extra Turkish olives. Enjoy!
