350g | cooked day-old rice OR cooked wild rice and basmati rice combo, cooled |
1/2 tin | black beans, drained and washed |
2 | bell peppers, cubed |
2-3 | spring onions, sliced |
1/2 tsp | smoked paprika |
1/2 tsp | ground coriander |
1/2 tsp | Niki's Turkish blend |
to garnish | dried parsley |
to garnish | a good pinch of smoked sea salt |
1 | fried egg |
to garnish | chilli sauce, optional |
a small handful of cherry tomatoes, chopped into quarters | |

a good plug of olive oil and apple cider vinegar | |
a sprinkle of dried parsley | |
