Ingredients

chicken thighs, skinned and boned

3 tbsp

Steenbergs Organic Mesquite spice blend

2 tbsp

olive oil

1 tbsp

lemon juice

lemon, halved

Quick and easy way to spice up your BBQ chicken with Steenbergs Organic Mesquite Chicken spice mix.

Method

Unfold the chicken thighs, place under a piece of clingfilm and bash briefly with a rolling pin or similar to flatten them out.
Mix together the spice, oil and lemon juice in an large bowl.
Add in the chicken thighs and mix with your hands so that they are covered in the marinating mix.
Leave in the fridge for a couple of hours for the flavours to mingle.
Heat the barbecue or griddle pan to a high heat and cook for 10-15 minutes, turning half way through, until cooked through and nicely browned.
While cooking the chicken, cut the lemon in half and place the two halves flesh side down and cook until caramelised.
Serve the chicken with the lemon squeezed over.
Delicious sliced up and served with salad and yoghurt in a flatbread.
