| 1kg organic pork, cut into 5cm | cubes, but with fat (i.e. not lean) |
| Steenbergs Organic 's natural sea salt to taste | |
| 60g | organic sesame seeds |
| 3tbsp | vegetable oil |
| 1 | Ancho chile, veins and seeds removed |
| 1 | small white onion cut into thick slices |
| 1 | garlic clove |
| 4 | Serrano chiles (should not be too hot) |
| 4 | plum tomatoes |
| 2 - 4 slices French bread (e.g. baguette) about 2½ cm | thick |
| 1 | whole organic clove |
| 2 | organic black peppercorns |
| 1 | organic allpsice berry |
| 1 | organic bay leaf |
| 1/8tsp | dried organic marjoram |
| 1/8tsp | dried organic thyme |
