Chilled Pineapple and chilli coconut soup Recipe
This chilled soup is a great dinner party starter.
Ingredients
| 450g | pineapple |
| 200ml | organic coconut milk |
| 6 | basil leaves |
| 1 | red chilli deseeded |
| Salt and pepper to taste |
Method
- Place all ingredients into a liquidiser
- Blend till smooth and creamy
- Pour into shot glasses
- Serve chilled/decorated with a piece of chilli and a basil leaf on top
- This soup is great as a canapé or vitamin boost
