Chilli Beetroot Relish

The earthy beetroot taste is complimented by the many spices used in this recipe.



  1. Peel and grate the beetroot and carrot
  2. In a frying pan, dry fry the cumin seeds until they 'pop.' Add to the grated veg with the other spices, garlic and chopped chilli. Give everything a good mix
  3. Warm the sugar and vinegar until the sugar has melted and pour over the veg mixture. Stir and have a taste. This is where I add some chilli flakes, salt and pepper. Taste again but don't forget that the chilli does warm up over time! Add more sugar and cider mix to taste if required
  4. Store in jam jars or kiln jars. Once opened keep in the fridge. It will keep for 1 month - if you can stop eating it! A wonderful gift for a friend to warm any heart and soul.
