Andaliman is an unusual pepper from Northern Sumatra. Andaliman tastes citrussy and a mild numbing sensation like a Sichuan Pepper-light.
Andaliman Pepper, or Indonesian Citrus pepper, is related to Sichuan pepper. Andaliman pepper is small has a strong and bright lemon and lime aroma, a bit like lemon sherbets. The taste of Andaliman pepper is, also, of lime and orange flavours with the same (but lighter) tongue-numbing sensation you get from Sichuan pepper. Indigenous to Sumatra, the Bataks of north Sumatra have grown andaliman, their staple pepper, for many years.
Andaliman Pepper is substitutable for black pepper in any dish, but is really good with chicken, red meat and fish. Try mixing andaliman pepper with galangal, turmeric, grated fresh ginger, chopped garlic, lime leaves, finely sliced shallots, lemon grass stalks and chillies for a great seasoning for chicken.
