Steenbergs Dried Lime Leaves are one of Steenbergs' most popular herbs. Kaffir lime leaves give a clean floral and citrus flavour and aroma. Kaffir lime Leaves should be stored in airtight containers as they do lose flavour when exposed to air.
Kaffir lime leaves are an important ingredient in Thai cuisine as it is the tangy, citrus perfume found so often in soups, salads, stir-fries and curries. Kaffir lime leaves are, also, used in Indonesia and Malaysian fish and chicken dishes, and you can remove the freeze dried lime leaves before serving if you wish.
Kaffir lime leaves come from small shrubby trees, Citrus hystrix, that grow to about 5 metres tall (10-16 ft high). The trees have numerous needle-sharp spikes and double leaves, with each pair of citrus-looking leaves joined head and tail to each other. The kaffir lime leaves are 8-15cm long (3-6 inches) and 3-5cm wide (1-2 inches). The leaves are dark-green and when freeze-dried become a bright, almost fluorescent, green. The aroma and taste of lime leaves is floral and citrus-like, but it lacks the acidic notes and is much sweeter and give a characteristic Thai style flavour to coconut milk based sauces.
