Steenbergs Organic Culinary Lavender is a wonderful addition in terms of aroma and flavour to your culinary creations.

Steenbergs Organic Lavender adds some colour to your cuisine and is great for home crafting.  The delicate purple flowers of organic lavender are used in many French recipes. Substitute Steenbergs organic lavender for rosemary on roast lamb (or even duck) to give a more flowery flavour.  Organic lavender is also delicious in scones and ice-cream. Perhaps most often thought of as a complement to sweet dishes, organic lavender is delicious in savoury dishes as well but be warned that a little goes a long way. We've also heard of people using lavender in salad dressings. 

Lavender is an attractive aromatic plant that grows in many domestic gardens and can be used very neatly in cooking, or for crafting.  There are many types of lavender, however the most commonly used for cooking are English (Lavandula angustofolia) and French lavender (Lavandula stoechas), growing to 0.5-1m high (1.5-3ft) and has long, slender grey-green leaves with slender long stems that reach upwards, ending in attractive highly perfumed heads made from tiny purple petals.  The flavour is camphor-like, piney and floral, with hints of citrus, mint and rosemary.  For more information, take a look at Wikipedia.

Lavender is not often thought of for cooking, but is great added to vinaigrette, ice cream or to shortbread or try Steenbergs "Ripon" Mess with Lavender Custard.  Lavender is very good with lamb and veal as well as fish, especially the richer tasting ones.
