Tomatoes are a cook's dream and one should never be in a kitchen without a tin of tomatoes or a jar of passata close at hand, while my mother needs a tomato salad every day in all seasons. Tomatoes have a beautiful rich colour, a smooth texture and a sweet, rich and fruity flavour. Tomatoes are great on their own prepared almost naked but with a sprinkling of sea salt and a pinch of pepper, or made into a rich sauce with olive oil and Italian herbs or a curry with ghee and curry spices. With tomatoes to hand, the whole world's cuisine is at your fingertips from Italian through to Indian or raw foods and just the tomato on its own.

Tomato plants, Solanum lycopersicum, are vines that have a dark green colour and are covered in fine hairs, growing 1-3 metres (3-10ft) and there are thousands of cultivars now grown across the world. Tomato plants are perennial in their native habitat but are generally grown on an annual basis. Tomato plants have a weak stem relative to the weight of their fruits and alternate leaves. Tomato plants bear yellow flowers. The leaves grow 10-25cm (4-9 inches) long and the stems of tomatoes have a distinctive odour that is - well - tomatoey. Surprisingly, tomatoes are a relatively new food as prior to 1850 they were considered unwholesome or even poisonous. The fruits vary greatly in size from 5mm to 10cm in diameter and while the classic colour is bright red, they are found in yellow, orange, pink, purple, green, black and white and even striped and multicoloured. As for cooking, good food is barely possible without tomatoes somewhere especially in sauces. Use organic tomato powder as a base for soups or drizzled into flour for a tomato coloured bread or just a little when added into the water when boiling rice to give a pinkish colour to the rice and a soupcon of flavour.
