A delicious afternoon tea cake from tamara.eats made with luscious lemon sugar, lemon zest and lemon extract.
Ingredients
| 225g | butter |
| 225g | organic lemon sugar |
| 4 | large eggs |
| 225g | self-raising flour |
| 1 tsp | baking powder |
| 75g | natural yoghurt |
| 1 | vanilla pod |
| 3 | lemons, zested |
| 1 tsp | lemon extract |
Method
- Beat 225g unsalted butter and 225g sugar together for 3 mins using an electric whisk until fluffy.
- Add 4 eggs one at a time.
- Fold in 225g self-raising flour and 1 teaspoon of baking powder.
- Fold in the 75g of yogurt, 1 vanilla pod, lemon zest of 3 lemons and 1 teaspoon of lemon extract.
- Bake at 180C for 30-35 mins until golden and a skewer inserted into the middle comes out clean.
