Home made quiches are easy to make and are popular with whoever you are feeding - friends or family, particularly on a summer's day in the garden.
| 210g/ 7½ oz | plain flour |
| 3 tbsp | freshly grated Parmesan cheese |
| 110g/ 4oz / ½ cup | unsalted butter |
| 4 tbsp | ice water |
| 1 tbsp | Dijon mustard |
| 1 tbsp | olive oil |
| 1 small or ½ medium | onion, minced |
| 125g- 250g / 3½ - 9oz | mushrooms, sliced (best you can find) |
| 2 | garlic cloves, minced |
| ½tsp | organic Herbes de Provence |
| Sea salt and freshly ground organic black pepper or alternatively a little Steenbergs organic perfect salt | |
| 225ml/ 1 cup | milk |
| 2 large | free range eggs |
| 2tbsp | freshly grated Parmesan |
