A tasty chicken, mushroom and spinach bake topped with our stuffing seasoning and cheese. Serves 1-2
Ingredients
| 2 tbsp | olive oil |
| 4 | spring onions, sliced |
| 1 | free-range chicken breast, skinned and sliced |
| 5 | chestnut mushrooms, sliced |
| a small handful | spinach, finely sliced |
| 1 clove | garlic, chopped |
| a small knob | butter |
| 150ml | single cream, or crème fraîche |
| 1/2 tsp | Italian herbs |
| 1/2 tsp | wholegrain mustard |
| 2 tbsp | Parmesan cheese, grated |
| 2-3 tbsp | Steenbergs Sage & Onion Stuffing Mix |
| to taste | sea salt & pepper |
Method
- Heat the oven to 190C.
- Heat the oil in a sauté pan and fry the onions for a couple of minutes.
- Add the chicken and stir fry for 5 minutes until cooked.
- Add the mushrooms, garlic and butter and stir fry for a further 2-3 minutes until the chicken is cooked. Then stir in the spinach.
- Add the cream, mustard and bubble gently for a couple of minutes to thicken.
- Finally stir in 1 tbsp Parmesan, season with some sea salt and pepper and place in an oven proof dish.
- Mix the remaining spoonful of Parmesan with the stuffing mix and sprinkle over the chicken.
- Bake in a preheated oven for 15 minutes.
- Serve with a fresh, crisp salad.
