A quick, simple steak recipe with creamy peppercorn sauce. Easy to make, a classic combination.

Method

With a pestle, crush green peppercorns in a mortar. Add these to the 2 tbsp double cream and set aside. Heat butter in heavy grilling pan. Sauté mushrooms, shallots and parsley. Add cognac and cook off alcohol. Add the peppercorn mixture and simmer for 2 minutes. Add the crème fraiche and a good pinch of perfect salt seasoning. Remove from heat and keep warm.
Brush steaks with sunflower oil. Cook steaks on a hot grill with a little butter to your liking. Pour sauce over cooked steaks. Serve with fried potatoes and rocket salad.
