Parsnip, Sabzi Polo and Apple Soup Recipe
A tasty autumnal soup to help use up all those windfall apples.
Ingredients
| 25g | butter |
| 3 large | parsnips, chopped |
| 1 medium | potato, peeled and diced |
| 1 small | red onion, chopped |
| 2 medium | apples, peeled and diced |
| 1 | clove garlic, shopped finely |
| 1.2 litres stock | use Steenbergs Organic Vegetable Bouillon |
| 1 tbs | Steenbergs Sabzi Polo Herb Blend |
| 1 tsp | Steenbergs Organic Perfect Salt |
Method
- Melt the butter in a pan, add the parsnips, potato and onion, then cover and cook gently for 10 minutes or until they begin to soften and the onions are translucent
- Add the stock, apple and Sabzi Polo and Perfect Salt. Cover and simmer gently for a further 30 minutes, until vegetables are tender
- Blend in a liquidizer or a hand-held 'blitzer' until smooth
- Return to the pan, add the cream, season to taste, and gently reheat before serving
