Ingredients
| 3 | red/green peppers, deseeded and chopped |
| 4 | ripe tomatoes, peeled, deseeded and chopped |
| Olive oil | |
| Pinch | organic paprika |
| 1 | clove garlic, finely chopped |
| ½tsp | organic thyme |
| 1 | organic bay leaf |
| organic Marjoram | |
| Steenbergs Organic natural sea salt | |
| Indian organic black pepper | |
| 1tsp | FAIRTRADE cane sugar |
| 6 | eggs |
| 4 | slices cured ham (e.g. bacon, Parma or ideally Bayonne) |
Method
- Heat some olive oil and cook the vegetables, spices and seasonings with the cane sugar until they are cooked and mushy.
- Beat the eggs with a little water and stir them in as for scrambled eggs.
- Meanwhile, fry the slices of ham and serve as an accompaniment, with fresh (but not too fresh) baguette or good white bread.
