3 knobs | butter |
6 | organic cardamom pods, opened to release the seeds |
Sea salt and freshly milled organic black pepper |
This recipe was given to us by Sally Fordy who loves it with roast lamb but works as a side for a variety of meals.
Peel carrots and cut into matchsticks. Place in ovenproof dish with lid. Crush cardamom seeds slightly and add to carrots.
Add the butter. Season with sea salt and generous amounts of freshly ground pepper.
Bake in oven at 180°C (or with the roast!) for 1 hour or until soft.
