Banana bread of loaves are always popular this version is wheat free so gluten free.
2 | bananas, peeled and mashed |
160ml | runny honey |
165g | carrots, peeled and grated |
2 | eggs |
125ml | thick Greek yogurt or dairy free yoghurt |
210g | rice flour |
60g | Potato flour |
30g | Tapioca flour |
2 1/2 tsp | Steenbergs Gluten free Baking Powder |
1 tsp | Steenbergs Ground Cinnamon - organic and fairtrade |
Pinch | Steenbergs Traditional Sea Salt |
Serves 8-12
1. Mix mashed banana, honey and grated carrot. Add yogurt and eggs, whisk together
2. Sieve the remaining ingredients and add to the banana mixture.
3. Fold the dry ingredients into the banana mixture.
4. Place in a lined loaf tin (9 x 19 cm) and bake in a pre-heated oven at 160o C for 40-45 minutes, or until a skewer inserted into the centre comes out cleanly.
5. Leave to cool slightly in the tin before turning the loaf out onto a cooling tray.
