Wild Assam Pepper is harvested from wild grown pepper native to the Assam province in north eastern India. Assam Pepper looks like a small oval blackberries, comprising lots of small peppercorns on a stalk. It is really a stunted type of long pepper, similar to traditional Indian pippali.
Wild Assam Pepper has a mildly smoky and peppery aroma, tasting pungent, warm and full-bodied, with hints of smokiness. Assam pepper has a pleasant heat, but is sharper and more mouth-numbing than traditional black pepper, i.e. more similar to long pepper.
Use Assam pepper like long pepper or black pepper.
