Ingredients

200g

self raising flour

250ml

milk

medium hens eggs

2 tablespoons

soft brown sugar

3 knobs

Butter

1 punnet

fresh strawberries washed

Vanilla pod seeds only

1 Teaspoon

organic Vanilla extract

Large pot Double cream

organic vanilla sugar to decorate

A pancake recipe that is topped with fresh strawberries, the amazing flavours of vanilla seeds heightens the strawberry taste, delicious for breakfast, brunch or even supper.

Method

Put the flour, sugar, eggs, milkand sugar into a bowl or large jug
Split the vanilla pod lengthways and scrape the seeds out
Add the seeds to the jug/bowl
Keep the Vanilla pod and put into a sugar bag to use another time
Whisk the flour mixture until creamy and lump free
Cut the strawberries into bite sized pieces
Whip the cream till thick with the vanilla extract but still will drop off a spoon easily when shaken
melt 1 piece of butter in a frying pan till sizzling but not browning
Spoon 3 Large dollops of the pancake batter into the pan
Cook on a medium heat till bubbles appear on top of each pancake
Using a spatula turn each pancake over and cook other side
The pancakes should take about 3-4 minutes either side
Keep warm
Add another knob of butter and continue to cook the rest of the pancakes
Plate 2-3 Pancakes on each individual plate
Top with fresh cream, strawberries and vanilla sugar
