Ingredients

1 cup

organic walnuts or pecans

1 cup

organic medjool dates

1 cup

organic raisins

2 tbs

Steenbergs cocoa nibs

2 tbs

organic agave syrup

1 tsp

Steenbergs organic cinnamon

1/2 tsp

Steenbergs organic lebkuchen(optional, to taste)

Being unable to digest dairy products and eggs I did not see why I should not have some delicious treats that taste so unhealthy - yet these taste fabulous, have the 'melt-in-your-mouth' texture and one cannot believe that, being so gooey and rich, you can have another one and be 'guilt-free!'

Method

Place the nuts in a liquidiser and pulse until they are like breadcrumbs (you may like more bite in the brownie so less pulsing would be preferable)
Add all other ingredients and pulse until dates are broken down and mixture is sticking together - the mixture may need a little cajoling as the dates make it deliciously sticky!
Spread into a parchment-lined tin and press down with the back of a spatula. Refrigerate for an hour before cutting into squares or using festive cutters to add a seasonal feel. It is best if it can be stored in the fridge otherwise it is wonderfully sticky.
