Sweet Potato Gratin Recipe
Creamy sweet potato recipe on the theme of potato dauphinoise can be made vegan using coconut whipping cream, cheese free recipe.
Ingredients
| 6 | medium sweet potatoes, washed, not peeled, cut into thin discs |
| 1 tbsp | za'atar |
| 6 | garlic cloves |
| 2 tsp | sea salt |
| 1/2 tspn | black pepper |
| 250ml | whipping cream (can use dairy free whipping cream) |
| parsley to garnish | |
| I used a measuring spoon rather than a kitchen-drawer spoon for ingredient quantities |
Method
- Preheat oven to 200oC/Gas Mark 6.
- In a bowl mix together all ingredients, apart from the cream and parsley. Arrange slices in a deep medium-sized ovenproof dish and sprinkle over any remaining bits of garlic etc from the bowl.
- Cover dish with foil and bake for 45 minutes.
- Remove foil, add cream to potatoes and roast, uncovered for 25 minutes or until sweet potatoes are soft.
- Garnish with a sprinkle of parsley and serve hot, or allow to cool - both delicious!
