Steenbergs organic garlic granules are slightly yellow in colour and ideal for cooking as it tastes like fresh garlic without the hassle.  Steenbergs Organic Garlic Granules is a great substitute for peeling fresh garlic bulbs all day long.  Garlic is closely related to chives, leeks and onions and is a hardy perennial with long, flat solid, spear-shaped leaves.  It is the crushing of organic garlic cloves that releases that classic garlic aroma - strong, sulphurous and lingering - coming from the alkyl disulfide. Uncooked garlic is sharp and acrid with a hot sensation on the palate, but on cooking it adds sweetness to a dish's flavour while the sharpness and heat have been reduced.

Garlic, Allium sativum, comes from the same family as chives, leeks and onions.  Garlic is grown best in rich, moist soil in a sunny position, but overall it is pretty hardy.  Garlic is a hardy perennial with long. flat, solid, spear-shaped gray-green leaves; the garlic leaves grow to 30cm (12 inches) and 25mm wide (1 inch), then like chives the flower is a happy and jolly mauve-tinted white petals that grow above the leaves on a rod-like stalk.  The spice part is the bulb, which grows under the ground.  Garlic bulbs are white or pink skinned and consist of a collection of triangular segments - cloves - in a paper-like outer skin.  To harvest, the plants are pulled up when the tops dry out, then hung out to dry in the shade.  The bulb does not give out a smell when in the husk, but when crushed or peeled, the enzymes in the bulb rapidly produce allicin which breaks down into allyl disulphide, so producing the characteristic garlicky, sulphurous and lingering.  For the granules the dried garlic bulbs are chopped and in the powder these are ground down to a powder.  For fuller details on garlic, check out  Wikipedia.

Garlic is used to enhance the flavours in almost all savoury recipes, but some do not like its flavours.  On cooking, garlic develops a sweeter taste than it has when raw.  Garlic is found in most cuisines - from the Mediterranean, Indian, Asian, Cuban mojos and Mexican - and is good in many savoury dishes including pates, terrines and sausages.  I have even come across a pudding that is based on garlic, but have never dared to make it.  As a good starting point to get the idea of garlic, go to the Steenbergs recipe pages or try making aioli or garlic bread.
